I’ve just made the necessary verifications on my side, and it seems your order is pending manual validation. You should be receiving an email from the customer validation department (if you haven’t already) to which a short answer with the proper ID documents should be sent. The email will contain an explanation of what should be sent. Once this is done and if the validation department treats your case favorably, you will be receiving an email that confirms the delivery, and the server will also be appearing in your OVH Manager.
